The area of "design for the territory" has gradually been enriched by the growing and widespread interest in food, due to its relevance for the quality of life of people and of the environment and also for the effectiveness of agricultural production in the territorial identity enhancement.Design, a discipline that communicates and elaborates the story of traditional knowledge, has become an important actor in the development of food culture, a fundamental aspect of human history. Socio-anthropological readings moreover invite to consider design as a primary activity of the human being. The reflection on the "anthropological dimension of design" allows to explore different "qualitative" aspects in the project, alongside the functional, spatial, technical-productive and economic aspects that interact in the design process; in fact, it’s in the everyday gestures and practices that relationships between environment, objects and people are actually built. The text ends with the presentation of some project experiences developed around food and its complex cultural history; experimenting in many cases an "open" and collaborative design dimension, which led the designers to build certain phases of the project “on the field”, as happens in the social sciences, through the inclusion and listening of the different territorial actors.
