The contribution reconstructs the history of the Amatician gastronomic heritage: a history of transcalar relationships linked to the long process of emigration that over the centuries has led the Amatrician community to move to Rome. It retraces how the community has built your gastronomic tradition - understood as a cultural heritage, as well as an economic one - in the mobile relationship between multiple places. A process of construction of strongly transcalar symbols and collective capitals that has its roots in the transhumant origin of the Amatrician community, which the volume deals with as a whole. Finally, referring to the present post-earthquake, the contribution critically discusses the role of gastronomic identity with respect to the development of the Amatrician territory, presenting it as a vehicle for extractive and conflicting development policies.
