When the spotlight on the kitchen and table stages was extinguished, the media hangover against star chefs or the supposed miracle-working virtues of a self-styled correct diet, exhausted the rhetoric of the more or less mystical naturalisms or dietary prodigies as much as contradictory, is extinguished, the time has come to rediscover the truth of food. Which would mean going back - beyond the media chatter that has tired the audience of every order and degree - to what is really on the table: the result of a wise transformation of raw materials and their creative mixture, but also significant fragments of history, society, culture, politics, ethnic identities. Where gastromania seemed to be interested in what lies before the dish (life stories of the producers, mythologies of the chefs ...) or after it (tasting rituals, critical speeches ...), it is time to focus on the dish itself, on the many truth of the gastronomic experience.
