Abstract

[automatically translated] In recent years the consumer's attention was increasingly directed towards the nutritional characteristics of foods. These properties are of great importance as regards the production of small ruminants. This paper is intended to summarize the main findings from the research project "Aspects of production of small ruminants with particular impact on human health." They were analyzed by the methods described in the literature: 1) genetic polymorphisms of biopeptides milk of small ruminants; 2) the activity of some enzymes of the fat globule membrane and the lipid fraction of sheep's milk; 3) the nutritional quality of milk and sheep's cheese in relation to the intensity of grazing; 4) the serum bioactive components and burns waste to the production of sheep and goat cheese; 5) genetic resistance to transmissible spongiform encephalopathies and the economic and biological efficiency in sheep breeds.
